Chocolate Strawberry Almond Nut Balls and other random things!

We’ve had such a great weekend/week here, that it’s left me with no time to blog. A couple of my college friends came down from Boston to visit, so we were very busy Monday and some of Tuesday. I’ve also been preparing for a huge road trip we are taking. This weekend I baked/prepared apple walnut muffins, 2 types of nut balls and chia oatmeal breakfast cookies from Brittany.

They all came out great. I based the muffins on this blueberry muffin recipe and just left out the blueberries, used a generous cup of applesauce and added 1/3 cups of walnuts.

For the nut balls, I basically just threw ingredients in the food processor until it processed into a large ball.

Other random things:

  • I made pizza for my friends. Yum. If you aren’t making your own pizza, you should try it! You’re missing out!
  • I’ve switched from Seventh Generation diapers to Huggies Little Movers. Seventh Gen was making Liv leak EVERY TIME. I could change it every hour and it was still leaking. I was beyond frustrated and decided to switch. I plan on calling the company again and talking to them about it. (I called once and they sent me a larger size to try, unfortunately it didn’t solve the problem.)
  • I’m on week 7 out of 8 of Best Body Bootcamp. Sad it’s almost over. I’ll be participating again for sure. I absolutely feel stronger especially this round.
  • Liv’s second tooth popped through on Tuesday. I’m looking forward to a break until the next ones start coming in.
  • Olivia stood today for a couple of seconds (2 or 3?) She’s really working hard on trying to walk. She is just started to be able to walk only using one hand for help. It’s such an exciting time!

Superbowl Sunday & Turkey White Bean Chili!

How was everyone’s weekend? Ours was great. Saturday we did NOTHING besides cleaned up some things around the house. Sunday we went food shopping, cleaned up some more and I made a couple things for the Superbowl. When I say “for the Superbowl” I mean we ate at 5 and everyone was gone by 6:30.

Danny watched the Superbowl while I watched The Shield (anyone else watch this show?!) on the computer. I did pause it to watch Beyonce’s half time show and to hear about the blackout. I was happily asleep by 9 o’clock and slept through the night besides a couple short wake ups. (Danny did the 11:30 wake up and she slept till 6 besides that!!)

I wanted to share the recipes I made because they were SO good!

Jessica’s Whole Wheat Fontina Portobella Pizza (I ended up only using 1 piece of turkey bacon and swapped provolone for fresh mozzarella and left out the parmesan all together.) This was delicious. I usually only make traditional pizza or salad pizza so this was a nice change!

Healthy Chicken Fingers  This is my recipe. I’ve made these guys a whole bunch of times and they are so perfect with some ketchup! (Or honey mustard!)

A green salad. No recipe linking here – I did made a romaine salad with some cucumbers and black olivies. Simple.

And lastly,

 

We topped this chili with the leftover grated fontina cheese, but feel free to use any cheese to your liking..or to leave out! I served this without any grains because we were having pizza, but for leftovers I’ll be eating this with brown rice or farro! I LOVE the dutch oven because you just throw everything in and don’t worry about it, besides checking on it occasionally and stirring. ( I have this Rachael Ray one, which was a tad small for this. I ended up removing some of the liquid and dumping it, so if you have this one just use a little less chicken broth.)

Veggie Filled Secret Ingredient Meatloaf & Vega Bar Winners!

Today feels like Monday to me since it’s such a short week. (I don’t think that makes sense..) Even though I did work half a day yesterday, I still feel like I had a super long weekend! Super long weekend, means I have no short of a million things to do today.

I’m trying to get back into somewhat cooking. I say somewhat because most of the time I have no desire to cook or eat, but I’m trying here. Plus, Danny does have to eat, so I’m really trying here. Some days I’m convinced that the 3rd trimester stinks as much as the 1st. The nausea and food aversions/disinterest in food is NO fun.

I’m trying to make easy meals that take 10-15 minutes to prepare and that pack a nutritious punch. Like this meatloaf. Meatloaf was one of the first meals I ever cooked for Danny and one of his most favorite things I make. And no I do NOT use ketchup in my meatloaf.

I promise you don’t even taste the veggies in this meatloaf. It’s just delicious. Make it.
