Hi! Welcome to my blog! My name is Nicole and I have a passion for cooking, baking, eating, running, yoga, etc, you get the picture.  I am the founder of Blissful Eats, a gluten free snack company that specilizes in granola & nut bites. We feature snacks that are geared towards people who love eating delicious, HEALTHY food with real ingredients. We even have paleo, vegan and nut free friendly snacks too!  I used to be a 4th grade special education teacher in NYC, but after 5 years, I realized that wasn’t for me anymore. I had the opportunity to study at Integrative Nutrition and now am very happily in my 2nd career.

I spend my days as an at home working mom; juggling taking care of my daughter, Olivia, running my small business and everything else that fits in with being a mom. I’m also proud to be a FitFluential Ambassador.

I started this blog in August 2009 after getting a boatload of emails and phone calls from my sister and mom about recipes/tips/meal ideas. My sister and husband help convince me that I should blog as a way to keep track of recipes and tips that I have accumulated over the years. In the summer of 2009 I finally had “me” time, which was unlike the past couple of summers when I was in grad school and/or planning a wedding. I spent a lot of time over the summer cooking, baking, running, exercising and spending time with my family and friends.

After the craziness of that school year, I really forgot how much I really  had a passion for cooking, baking and just, over all, living a healthy life. Yes, I always tried to incorporate healthy living/eating/working out into my everyday life but it was on auto-pilot. After having time off I realized how much I LOVE all of those things and being able to share it with others, which is where the blog was born. I find it to be a huge stress reliever and release and also a great way of communicating with other people who enjoy the same things! I have learned SO much from reading other blogs and have expanded my repertoire of foods.

I eat a well balanced plant based diet. I believe that eating well has to be healthy AND taste good.

As for exercise I enjoy running, lifting weights, yoga, taking classes and basically anything that gets me moving. From time to time, I enjoy racing, but for now I’m just enjoying getting out there and running!

I found out I was pregnant in Feb. 2012. I stayed fit and healthy up until the end, enjoying running (which eventually went to walking around 35 weeks), some light weight lifting and lots and lots of walking.  My daughter Olivia was born in Oct 2012.(Birth story part 1, part 2 and part 3.). Our life was forever changed in the best way. I also now blog about my experiences as a mom. It has quickly become one of my favorite things about this blog.
