I’m always playing around in the kitchen, even if I’m not posting recipes here. Livi loves to help out when I’m cooking, so I’m always trying to figure out how she can help out. There’s SO much kids can do. If you have little hands, then have them help out with this one! For the video purposes, she didn’t help, but we made some more after it. Liv can be picky (hello 3 year old) but when she makes it, she’s more likely to give it a try! I also love this recipe because there are so many ways you can adapt it! You can keep it as it, loose the cheese, add more cheese, add beef, chicken or turkey, a different kind of bean…the possibilities are endless!
Ways kids can help out with this recipe:
- Tear the brown rice wraps into strips
- Break the spinach up into small pieces by ripping it.
- Placing the brown rice wraps into the muffin tins.
- Spooning or sprinkling each ingredient into the cups.
- Adding pinch of salt to the top!

What you need:
- Chopped Tomatoes
- Black Beans
- Chopped Baby Spinach
- Shredded Cheese
- Brown Rice Wraps
- Sliced Avocado
Cut brown rice wraps into strips. Spray with non-stick spray or put down wax paper in your large muffin tins so it doesn’t stick. Criss cross brown rice wraps in each muffin tin. Layer cheese, tomatoes, spinach and black beans. Cross brown rice wraps over. Bake for 10 minutes at 325. Add avocado, salt and pepper to the top! [/print_this]
