I only snoozed once and really I got up 3 minutes after I snoozed, so I’m calling this a win for starting the day. My alarm is set for 5:10, but I probably should move it up a few minutes.
I’m excited to be sharing a recipe with you…if I can call this a recipe. Whatever it is, it was delicious.
Meal prep is so important. I highly recommend it…but I haven’t been following my own advice lately, so I decided it was time to get back at it. Yesterday I made hummus, muffins (really for Blissful Eats muffin mix testing!), tuna salad, and roasted a chicken so there’s leftovers with that. Did you meal prep yesterday?
I have been getting back into the habit of using my spiralizer. I have this one Paderno World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer. I love it. I have the 3 blade spiralizer, but you can get the 4 blade too if you want even more of a variety.
These potatoes are awesome. You need to make them. You’re family will love them too.
I made one potato per person and it was perfect. I probably could have made double and it would have been eaten.
[print_this] Crispy Shoestring Potatoes
- 1 potato per person
- 1-2 tbsp olive oil
- sea salt and pepper
Preheat your oven to 400 degrees. Cut off the ends of the potatoes and cut it in half vertically (holding the potato long ways). Spiralize your potato using the larger triandle blade. Cut into pieces. I left them about 6 inches. Put in a bowl and toss with olive oil, salt and pepper. Lay on a baking sheet and bake for about 15 minutes. Check after 10 minutes and mix around. Remove potatoes that are crispy enough. [/print_this]
