Most weeks I make muffins and cookies at least once. Since it’s zucchini season, I’ve been taking advantage of them (because friends are generously sharing) and adding them to our muffins. This way I know Liv is getting in some extra veggies….and she has an after dinner snack she enjoys.
Enjoy Life sent me a few of their new muffin mixes. I really like them because they are filled with nutritious ancient grains and you don’t have to add anything but water and oil if you want. Of course I have to make it my own with a few additional mix ins.
I love Enjoy Life and their products mostly because they are delicious, but also because they are free from the top 8 allergens. They’re certified gluten free, kosher and vegan too! They also have 5g protein per serving!
Like I said I’m really loving adding shredded zucchini in, but you could also go for applesauce or even greek yogurt. Over here muffins are eaten as a snack, breakfast or dessert. I used Enjoy Life muffin mix because it makes life super easy (and delicious), but I’ve included an alternative that will work too!
[print_this]Almond Chip Muffins (GF)
- 1 cup Enjoy Life Muffin Mix*
- 1 cup almond butter (I used Trader Joe’s raw)
- 1 cup water
- 1/4 cup ground flax meal mixed with 1/2 cup water (let sit for 5 minutes in a small bowl)
- 1 heaping cup shredded zucchini
- 1/2 cup chocolate chips
Preheat oven to 350 degrees. Mix together all ingredients except chocolate chips and fold to combine well. Add in chocolate chips. Put about 1/4 cup in lined muffin trays. Bake for 25-28 minutes.
*If you don’t have Enjoy Life Muffin Mix you could use 1 cup whole wheat flour, or a GF baking flour blend. Be sure to add in about 1/2 cup sugar and 1 tsp baking powder. [/print_this]
The best recipes are the ones that Olivia can help me with…and this is one of them. She loves helping with each ingredient and asks what each thing is. She also loves lining the trays with the paper liners….and sneaking a few chocolate chips because she’s such a good helper.
