I LOVE easy dinners. What do you make for dinner, when you are cooking for one? Danny has had a weird schedule lately, which is why you haven’t seen many recipes from me. I’ve been throwing together very, very random dinners that usually involve beans and some type of vegetable. They are usually weird, random and not that exciting….except I came up with this new easy mahi-mahi recipe and it’s SO easy to make.
Last night I figured it was time to make a real-ish meal. I ate alone, but I knew Danny would be eating at home later. I took out mahi mahi I had bought from Trader Joe’s. I love buying fish there because they are super reasonably priced and wild caught. They also are the perfect size for Danny and me. 1/3 goes to me and 2/3 go to him. We usually finish it in one night.
I was having weird food cravings yesterday and all I really wanted was brussel sprouts and almond butter. To be semi-normal I roasted brussel sprouts, had the mahi mahi with a salad….and then dipped into the almond butter jars…3 times. Gotta do, what ya gotta do.
The mahi mahi I made was SUPER easy, quick and delicious. Please enjoy my iPhone picture. I was hungry, eating alone and lazy…I know.
- 1 pound mahi mahi
- sea salt
- black pepper
- 1/2 tsp garlic powder
- 1 tbsp lemon juice or 1 lemon
Preheat the oven to 350 degrees. Line a baking sheet with aluminum foil. Spray baking sheet with non stick spray. Place fish on the baking sheet. Sprinkle with sea salt, generously with black pepper, garlic powder. Sprinkle with lemon juice. Cover with aluminum foil. Bake for 30 minutes.[/print_this]
This meal takes about 2 minutes to prepare and 30 to bake. This is perfect for a night where you want a nice, filling meal, but don’t feel like taking loads of time to prepare it.Super easy mahimahi recipe! Click To Tweet
